George was born and raised on the beautiful island of Crete, Greece. At 26, he immigrated to America and settled in Salt Lake City, Utah. There he managed, and eventually owned, three American restaurants. He also met his future wife, Tracy, who was born and raised in Salt Lake City and was trained as a cook in the Army. George and Tracy were married in George's village and eventually returned to Crete to live for four years. There, Tracy was also trained in the villages to cook the delicious foods of Greece. They returned to Tucson this time to open an authentic Greek restaurant with a little twist; make the food fresh, fast and inexpensive!
