Ask whether it applies to food only or to the whole invoice including rentals \u2014 the difference is substantial.<\/li>\n\n<li><strong>Staffing.<\/strong> Fash puts servers at $20 to $30 per hour, with roughly one server per 8 to 25 guests depending on service style. Plated service sits at the demanding end of that ratio.<\/li>\n\n<li><strong>Rentals.<\/strong> Plates, glassware, cutlery, linens, tables, chafing equipment. A low per-head quote often means none of this is included.<\/li>\n\n<li><strong>Delivery, setup and breakdown<\/strong>, plus travel if you are outside their usual area.<\/li>\n\n<li><strong>Gratuity.<\/strong> Fash describes 15 to 20 percent as standard, separately from the service charge.<\/li>\n<\/ul>\n\n\n\n<h3 class=\"wp-block-heading\">The service charge is not the tip<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">This is the point at which hosts most often pay twice without meaning to. The IRS treats a payment as a tip only where the customer voluntarily decides to pay it and determines the amount. An automatic charge added to a bill is a service charge, and when distributed to an employee it is generally treated as wages paid by the employer rather than tips paid by the customer. So an 18 percent service charge is not a gratuity by default. The gap is people and time, and public wage data makes that concrete rather than rhetorical.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Labour is the line that moves<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">The Bureau of Labor Statistics puts the median hourly wage for food and beverage serving and related workers at <strong>$15.24 as of May 2025<\/strong>, and the median annual wage for chefs and head cooks at <strong>$62,470<\/strong> over the same period. Those are wages, before the employer&#8217;s payroll costs, insurance, vehicles, equipment and the unbooked weeks. When a caterer quotes servers at $20 to $30 an hour, that is the loaded cost of putting a trained person in your room, not somebody&#8217;s take-home pay.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">It also explains the shape of the pricing table above. Drop-off catering has almost no on-site labour. Plated service needs a kitchen brigade able to send every plate at once plus a server for every handful of guests.
